You may scratch your head at the concept of Lent in the middle east, but lost among the conflict are a small minority of “original” Christians, including some Catholics, from which I am descended. Growing up with a freezer full of beef, the thought of eating meatless on Fridays seemed particularly burdensome, but, inspired by my Grandma Mary Agnes, I have created a plan to make Lenten-friendly items so good, you’ll feel guilty for not missing the meat, but isn’t that what Lent is all about anyway? .
